This is a recipe for Dad Melo, a recipe for all-male handed down from grandfather Nino, which can be offered as an appetizer or side dish. The name "a mushroom" I believe comes from the way you cut the menlanzana .. but I'm not sure! :)
Ingredients: - fried eggplant, diced 2 - 300 gr of peeled tomatoes - 2 cloves garlic - salt, olive oil and fresh basil to taste
Cut the eggplant into cubes, leaving the peel, and then fry in olive oil erle. Set aside. In a pan fry the garlic with olive oil, then add the tomatoes. Season with salt and dd a little bit of basil. Cotta ura complete, add the fried eggplant and cook for about 10 min. Then add more basil and serve cold.
